Wonderbread chaffle + a can o’tuna + secret herbs & spices + fresh mayo + magic = awesome?
Fresh Mayo
Mayonnaise
Version 2.0
Ingredients
- 2 egg yolks
- 1/2 tsp lemon juice
- 1/4 tsp salt
- 1 tsp dijon mustard (or regular) ( optional )
- 1 cup oil ( use something good )
Instructions
- Whisk/blend everything other than the oil.
- While whisking like crazy/blending, slowly add the oil in a very thin stream, until the mayo magically appears.
Tartare Sauce
Sauce Tartare
aka Tartar Sauce
Ingredients
- 1 cup keto mayonnaise
- 1 lemon zest
- 2 tbsp lemon juice
- 3 tbsp finely diced pickle
- 1 tbsp finely chopped parsley
- 2 tsp finely chopped dill
- 3 tbsp finely chopped capers
- salt & pepper to taste
Instructions
- Mix well.
- Let rest for at least 30 minutes before using to let the flavours combine.
- This will keep for a week in the fridge.
Notes
Optional things:
- 1 tbsp powdered allulose
- mustard (yellow or dijon)
- hotsauce
- chopped olives
- horseradish
- onions
- white wine vinegar
- pickle juice
- parsely OR dill
- minced garlic
Whole fish fillet version:
Breaded Fish Fillet
Ingredients
- 1 egg
- 1/2 cup almond flour
- 1 oz parmesan
- 1 tbsp parsley
- 1/4 tsp salt ( was 1/2 tsp, I found it too salty )
- 1/4 tsp pepper
Instructions
- Whisk the egg in a bowl.
- In another bowl, whisk together the remaining ingredients.
- Pat dry the fish with a paper towel.
- Dip the fish in the egg.
- Press the fish into the breading mixture.
- Fry or bake as usual (golden brown, internal temperature 145F)
Notes
Optional - add the zest of a medium lemon.
Tuna cake version:
Tuna Cakes
Ingredients
- 1 can tuna (something around 5 ounces/184 grams)
- 1 egg
- 1 tbsp mayo
- 1/8 tsp salt
- 1/4 tsp pepper
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1/2 tsp minced parsley
- 1/2 tsp minced dill
Instructions
- Mix everything together.
- Hand-form into 2 patties, 1/2-3/4 inch thick.
- Pan fry on medium-high heat for 3-4 minutes per side, or until golden brown.
As tempting as it is to break out a keto bun recipe, I’m going to go with the tried-and-true wonderbread chaffle today. It’s a lot quicker, cheaper, and still versatile if you want to add some flavouring to the bun (more herbs&spices, maybe lemon zest, mince up some more capers, etc).
Wonderbread Chaffle
Ingredients
- 1 egg
- 3 tbsp almond flour
- 1 tbsp mayo
- 1/4 tsp baking powder
- 1 tsp water
Instructions
- Whisk the egg until the whites are completely gone.
- Stir in the rest of the ingredients.
- Pour half (1/4 cup) of the mixture onto a mini (4″ diameter) waffle maker and cook for 3-4 minutes.
Notes
I usually add a pinch of salt, pepper, garlic powder, and oregano to mine.
