Start by making some mirepoix

  • 2 tbsp butter
  • 1 cup carrot
  • 1 cup onion
  • 1 cup celery
    all diced up

In a saucepan on medium-low heat, melt the butter.
Cook the carrots to slightly soft.
Add the onions and cook to slightly soft.
Add the celery and cook to slightly soft.
This should take 10-12 minutes. Do not brown anything.

The rest of the ingredients:

  • 1 lb ground beef
  • 4 minced garlic cloves (8-10 roasted garlic cloves)
  • 1 bay leaf
  • 2 tbsp extra virgin olive oil
  • 3 tsp italian seasoning
  • 15 oz (2 cups) canned tomato
  • 2 cups beef broth
  • salt & pepper to taste

Add 1 lb ground beef, raise the heat to medium-high, and keep stirring.
When the beef stops being pink (approx 8 minutes), add the rest of the ingredients.
Cover and simmer on low for 1 hour, stirring occasionally.
Remove cover, and keep cooking 1 hour, stirring occasionally.
Remove the bay leaf and serve.
