- Cutting board
- vegetable peeler or paring knife
- chef's knife
Ingredients
- 2 tbsp butter
- 1 cup carrot, peeled and diced
- 1 cup celery, diced
- 1 cup onion, diced Traditional is 2 parts onion
Instructions
- In a saucepan on medium-low heat, melt the butter.
- In the meantime, prep the veggies. If you're especially coordinated, you can do all of this at the same time.
- Cook the carrots to slightly soft (3-4 minutes).
- Add the onions and cook to slightly soft (3-4 minutes).
- Add the celery and cook to slightly soft (3-4 minutes).
- This should take 10-12 minutes. Do not brown anything.
