Mirepoix

Equipment

  • Saucepan
  • Cutting board
  • vegetable peeler or paring knife
  • chef's knife

Ingredients
  

  • 2 tbsp butter
  • 1 cup carrot, peeled and diced
  • 1 cup celery, diced
  • 1 cup onion, diced Traditional is 2 parts onion

Instructions
 

  • In a saucepan on medium-low heat, melt the butter.
  • In the meantime, prep the veggies. If you're especially coordinated, you can do all of this at the same time.
  • Cook the carrots to slightly soft (3-4 minutes).
  • Add the onions and cook to slightly soft (3-4 minutes).
  • Add the celery and cook to slightly soft (3-4 minutes).
  • This should take 10-12 minutes. Do not brown anything.
