Roasted Pumpkin Seeds

Course Snack

Ingredients
  

  • 3/4 cup Raw pumpkin seeds, dried with paper towel.
  • 1 tbsp Olive oil
  • 1/2 tsp salt
  • 1/4-1/2 tsp Spices (garlic powder, paprika, etc)
  • 1/8 tsp black pepper

Instructions
 

  • Preheat oven to 350F
  • Wash and clean the inside of a pumpkin in a colander.
  • Dry with paper towel.
  • Toss in a bowl with all the ingredients until evenly coated.
  • Toss around in the pan every 5 minutes, and bake for 12-15 or until you smell a nutty aroma and the seeds are golden brown.

 

Roast Pumpkin and Potatoes

Course Side Dish

Ingredients
  

  • 2-3 pounds Pumpkin
  • 1 pound potatoes
  • 1-2 pounts sweet potatoes
  • 1/4 - 1/3 cup melted butter or olive oil See below
  • Salt & Pepper to taste
  • small bunch of rosemary

Instructions
 

  • Preheat oven to 350F
  • (Optional - peel the pumpkin and potatoes)
  • Cut everything into large bite-sized chunks, around 1.5" cubes
  • Toss everything in a large bowl, spread on a parchment-lined baking sheet.
  • Stir on the sheet every 15 minutes so they brown evenly, and bake for 1 hour.

Notes

Use 1 tbsp per pound.
4 tbsp = 1/4 cup
7 tbsp = 1/3 cup (approximately)

Royal Icing

Course Dessert

Ingredients
  

  • 3 whites from large eggs
  • 4 cups confectioner's sugar (1 pound), sifted The sifting is important here!

Instructions
 

  • Using an electric mixer, beat the egg whites until frothy.
  • Slowly add 1/4 cup of the sugar, and mix well.
  • Keep beating on low speed, and slowly add the rest of the sugar, scraping the sides every 20 seconds.

Notes

  • Room temperature whites are easier to work with, but cold eggs are easier to separate. If you have time, separate the eggs while cold, and let the whites sit at room temp for 30-60 minutes.
  • While raw eggs are relatively safe, do not feed this to pregnant woment, babies, young children, elderly, or anyone whose health is compromised.
  • To make a glue for building a gingerbread house, add 1 tablespoon at a time until the icing becomes thick. It takes a while for this to set up and harden, so don't rush to adding a lot of sugar. 2-4 tbsp is usually right.
