Roast Pumpkin and Potatoes

Ingredients

Pumpkin

potatoes
1-2

sweet potatoes
1/4 - 1/3
cup
melted butter or olive oil

Salt & Pepper to taste
small bunch of rosemary
Instructions
Preheat oven to 350F
(Optional - peel the pumpkin and potatoes)
Cut everything into large bite-sized chunks, around 1.5" cubes
Toss everything in a large bowl, spread on a parchment-lined baking sheet.
Stir on the sheet every 15 minutes so they brown evenly, and bake for 1 hour.
Notes
Use 1 tbsp per pound.
4 tbsp = 1/4 cup
7 tbsp = 1/3 cup (approximately)
