Breakfast Bomb

Ingredients
  

  • 4 large Hard-boiled eggs
  • 8 oz cream cheese
  • 1 lb crumbled bacon
  • 2 tbsp finely chopped green onion Or minced fresh parsley, or anything else you want for some colour or fun flavours.

Instructions
 

  • Mix everything other than the bacon in a bowl.
  • Roll into 8 balls.
  • Freeze for 10 minutes to firm up the balls.
  • Press them firmly into a bowl of crumbled bacon.
  • Store in an air-tight container for up to 3 days.

Notes

WARNING! These are very high in calories, so be careful! You should only be eating 1-2 of these as your meal since they are around 375 calories each.

Keto Pancakes

Ingredients
  

  • 4 eggs, room temperature
  • 4 oz cream cheese, room temperature
  • 2 tsp vanilla extract
  • 1 tbsp sweetener
  • 4 tbsp coconut flour
  • 2 tsp baking powder (1.5 tsp for waffles)
  • Nut milk or 10% cream as needed
  • Optional cinnamon, 1/2 tsp flavouring
  • Optional 1 tbsp melted butter for waffles

Instructions
 

  • Mix the wet ingredients.
  • Add dry ingredients, and mix until batter is smooth.
  • Batter will thicken if it sits for a few minutes, add a splash of the liquid, and stir.
  • Pour 4-6" discs on greased and pre-heated pan or griddle at 300F
  • Flip when surface begins to bubble, and the edges harden.
  • Cook another 2-3 minutes, until golden brown.
