Breakfast Bomb
Ingredients
- 4 large Hard-boiled eggs
- 8 oz cream cheese
- 1 lb crumbled bacon
- 2 tbsp finely chopped green onion Or minced fresh parsley, or anything else you want for some colour or fun flavours.
Instructions
- Mix everything other than the bacon in a bowl.
- Roll into 8 balls.
- Freeze for 10 minutes to firm up the balls.
- Press them firmly into a bowl of crumbled bacon.
- Store in an air-tight container for up to 3 days.
Notes
WARNING! These are very high in calories, so be careful! You should only be eating 1-2 of these as your meal since they are around 375 calories each.
Keto Pancakes
Ingredients
- 4 eggs, room temperature
- 4 oz cream cheese, room temperature
- 2 tsp vanilla extract
- 1 tbsp sweetener
- 4 tbsp coconut flour
- 2 tsp baking powder (1.5 tsp for waffles)
- Nut milk or 10% cream as needed
- Optional cinnamon, 1/2 tsp flavouring
- Optional 1 tbsp melted butter for waffles
Instructions
- Mix the wet ingredients.
- Add dry ingredients, and mix until batter is smooth.
- Batter will thicken if it sits for a few minutes, add a splash of the liquid, and stir.
- Pour 4-6" discs on greased and pre-heated pan or griddle at 300F
- Flip when surface begins to bubble, and the edges harden.
- Cook another 2-3 minutes, until golden brown.
