Sweet potato casserole

Course Side Dish

Ingredients
  

  • 3 large sweet potatoes not yams, see below
  • 3/4 cup warm water
  • 1/2 cup packed brown sugar make your own
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup salted butter, cubed

Instructions
 

  • Peel, and cut sweet potatoes into 1" cubes.
  • Boil med-high heat until fork tender, approx 10-15 minutes.
  • Preheat oven to 350F
  • Transfer to 8x8 baking dish.
  • Sprinkle the spices on top
  • Mix water and sugar, and pour this syrop on top.
  • Evenly drop the butter on top.
  • Bake 5 minutes, toss to make sure everything is evenly coated, and bake another 10 minutes.
  • Spoon sauce on top to cover.
  • Let cool 5-10 minutes to thicken the sauce, and serve.
  • Store in an airtight container in the refrigerator up to 3 days.
    The butter will solidify, but melts when reheated.

Notes

Sweet potatoes are orange (sometimes reddish or white) with orange flesh 
Grown in North America.
Sweet.
Yams are more brown and have white or purple flesh.
Can be toxic if eaten raw, not normally grown in North America.
Much more starchy than sweet potatoes.
