Pan fry the sausage on medium heat until brown.
Make sure to leave at least 1 tbsp of sausage grease in the pan.
Set the sausage aside on paper towel to soak up the extra oil. Roll the sausages on the paper towel, then remove - the sausages might stick to the paper towel.
Add the xanthan gum to the pan, whisk, and cook until brown.
Add the rest of the Sausage and Gravy ingredients in order, whisking the entire time. Add the salt a little at a time and taste - if your sausage or broth are salty, it's easy to go overboard on the salt.
Simmer until creamy.
Optional - add 1/2 tsp garlic powder, and/or chopped celery, depending on what you like, and the flavour of the sausage.
Cut the sausage into small chunks, add to the gravy, and mix well.
Pour the sausage base into a casserole dish, drop 1 tsp dollops of biscuit mix over the top of the casserole.
Bake at 375F for 18-20 minutes, or until the biscuit top is golden brown.
