Preheat oven to 325F
Sift flour, cinnamon, baking soda, baking powder, salt.
In a separate bowl, mix sugar, oil, eggs, vanilla.
Combine both mixtures, fold in pumpkin and seeds.
Pour into nonstick 9x5 loaf pan. (see below)
Bake for 1 hour 15 minutes (knife should come out clean)
Cool for 15 minutes, then pop onto a cooling rack and cool completely.
