Pina Colada Balls

Ingredients
  

  • 2 cup Shredded, unsweetened coconut
  • 2 large eggs, room temperature, lightly beaten
  • 2 tbsp softened, unsalted butter
  • 2/3 cup powdered allulose ( or erythritol )
  • 1/4 tsp salt
  • 1.5 tsp rum extract
  • 1 tsp pineapple extract

Instructions
 

  • Preheat oven to 300F
  • Mix everything well.
  • Use an ice cream scoop, and place the balls at least 1" apart on a silicone mat, on a baking sheet.
  • Bake for approximately 30 minutes, or until golden brown.

Notes

There might be some sugar-eggy-butter around the base of the balls. You can trim this off, or ignore it. It's still delicious!
