Ingredients

Shredded, unsweetened coconut

eggs, room temperature, lightly beaten

tbsp
softened, unsalted butter

cup
powdered allulose
( or erythritol )
1/4
tsp
salt

tsp
rum extract
1
tsp
pineapple extract
Instructions
Preheat oven to 300F
Mix everything well.
Use an ice cream scoop, and place the balls at least 1" apart on a silicone mat, on a baking sheet.
Bake for approximately 30 minutes, or until golden brown.
Notes
There might be some sugar-eggy-butter around the base of the balls. You can trim this off, or ignore it. It's still delicious!
