Pina Colada Balls

Ingredients

cups
shredded, unsweetened coconut

eggs
at room temperature

tbsp
softened unsalted butter
2/3
cup
powdered sweetener
1/4
tsp
salt

tsp
rum extract
1
tsp
pineapple extract
Instructions
Mix everything together.
Roll out balls using a 2oz ice cream scoop.
Bake at 300F until golden brown (approx 30 min)
Let cool, and trim the awesome eggy goop that forms at the base of the balls.
