Orange Caramel Sauce

Ingredients

cup
sugar
1/4
cup
water

cup
orange juice (room temp)
1
tbsp
bourbon
( "optional" )
2
tbsp
salted butter
1/2
tsp
grated orange zest
( or use the zest of a whole orange)
Instructions
Bring water and sugar to a boil.
As soon as the mixture starts to turn an amber colour, remove from heat, and slowly whisk in the orange juice and "optional" bourbon.
Whisk in the zest, return to heat, and boil for 5 minutes, or until you get a dark caramel colour.
Remove from heat, and whisk in the butter.
Use immediately, or store in a jar in the fridge for up to 2 weeks.
Notes
If the bourbon happens to burst into flames, enjoy the show. The alcohol will cook off when you return the mixture to boil for 5 minutes.
