Line the bottom of a 9x5 loaf pan with overlapping strips of bacon so the ends hang over the sides.
Brush 2 tablespoons of the glaze on top of the bacon
Press the meat mixture into the pan.
Fold the bacon ends over the top of the loaf.
Flip the loaf over onto a baking sheet lined with aluminum foil, parchment paper, or a Silpat.
Bake until the bacon is browned. approx 50 minutes
Brush the remaining glaze on top of the bacon. and return to the oven.
Cook until interior temperature is at least 165F (approx 15-20 minutes).
Remove from oven, and let rest for at least 10 minutes before removing from the pan.
