Keto pie crust

Ingredients
  

  • 1.5 cup almond flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/3 cup keto sugar ( allulose is always best )
  • 3 tbsp unsalted butter ( plus 1 tsp to grease the pan )
  • 1 large egg
  • 2 tsp vanilla extract

Instructions
 

  • Preheat oven to 375F
  • Completely grease the pan with the 1 tsp butter.
  • In a large bowl, whisk the dry ingredients.
  • Cut the butter into the dry ingredients (fork, stiff whisk, food processor, etc) until it forms into coarse crumbs.
  • Beat the egg in a separate bowl, then stir it and the vanilla to the dough.
  • The dough should be able to form a fairly smooth ball.
  • Transfer the dough to the pit tin, spread it out evenly.
  • Dock the bottom and sides to prevent bubbles from forming.
  • Bake for 10 minutes.
  • Remove from the oven. The crust has very likely poofed up on you. If it did, gently press down the base with a silicone spatula, and dock it again.
    Loosely cover just the edges with aluminum foil, return to the oven and bake until the crust is golden brown (keep a close eye on it after 5 minutes - could take up to 10).
  • Remove and let cool completely before filling.
