Preheat oven to 350 F
Whisk wet ingredients and sugar until completely smooth.
In a separate bowl, whisk the remaining dry ingredients.
Sift in the dry ingredients while whisking and keep whisking until smooth.
On a silicone sheet (or very well-sprayed baking sheet - NOT greased), spread 1 tbsp of the batter, and spread to a 4" diameter (10cm). Make 2 circles that are about 4" apart.
Bake until 1/2 to 2/3 is brown, 5-7 minutes.
Use a spatula to flip the cookies over, place the fortune in the middle, fold the disc in half, and then bend it in the middle using a glass, or the edge of your baking sheet.
Let the cookie cool completely inside a cup, or muffin tray.
Repeat until all the batter is used.
