Stir everything together in a large bowl, until a dough forms and pulls clean from the sides of the bowl. Scrape the sides every minute.
Toss in 1 tbsp oil, so the ball of dough is completely covered
Cover the bowl with clingwrap or a lint-free cloth, and leave in a warm, draft-free place until the dough doubles in size, at least 1 hour.
Punch the dough down, form into whatever shape you like, place those things in a baking container, cover, and let rise again for another 30 minutes.
Score the top, brush with whatever wash or glaze you like, bake at 350 until golden brown. See #2 below
