In a large saucepan, bring oil to medium heat.
Add onion and cook on medium-high for 3 minutes.
Add meat, and cook until browned.
Add stock, curry spices, veggies reduce heat to med-low)
Simmer for 1 hour, or until the meat is tender.
Add tomatoes, half the yogurt, half the coriander, and stir until heated.
Serve with remaining yogurt and coriander.
