This is a fairly quick breakfast dish that should be ready on your table in about an hour.
Sausage with biscuit and gravy (keto)
Ingredients
Biscuit topping
- 1 cup almond flour
- 1 tsp baking powder
- 1/2 tsp xanthan gum
- 2 tbsp frozen butter
- 2 large egg whites
Sausage and gravy
- 12 oz ground pork breakfast sausage (check for non-keto filler)
- 1 tsp xanthan gum
- 1.5 cup chicken broth
- 1/2 tsp onion powder
- 1 tsp ground black pepper (to taste)
- 1/4 tsp salt (to taste - this one's important)
- 1/2 cup 10% cream
- 1/2 tsp garlic powder (optional)
- 1-2 stalk cubed celery (optional)
Instructions
Biscuit topping
- Whip egg whites to stiff peaks.
- Shred the frozen butter.
- Fold in everything, cover, and chill until needed.
Sausage and Gravy
- Pan fry the sausage on medium heat until brown.
- Make sure to leave at least 1 tbsp of sausage grease in the pan.
- Set the sausage aside on paper towel to soak up the extra oil. Roll the sausages on the paper towel, then remove - the sausages might stick to the paper towel.
- Add the xanthan gum to the pan, whisk, and cook until brown.
- Add the rest of the Sausage and Gravy ingredients in order, whisking the entire time. Add the salt a little at a time and taste - if your sausage or broth are salty, it's easy to go overboard on the salt.
- Simmer until creamy.
- Optional - add 1/2 tsp garlic powder, and/or chopped celery, depending on what you like, and the flavour of the sausage.
- Cut the sausage into small chunks, add to the gravy, and mix well.
- Pour the sausage base into a casserole dish, drop 1 tsp dollops of biscuit mix over the top of the casserole.
- Bake at 375F for 18-20 minutes, or until the biscuit top is golden brown.
