Here’s the keto French Fries recipe that took the keto world by storm earlier this year.
French Fries - Keto
Ingredients
- 100 grams almond flour (approx 1 cup minus 2 level teaspoons)
- 1 tbsp xanthan gum
- 6 tbsp hot water
- 1/2 tsp salt
Instructions
- Whisk dry ingredients
- Mix in hot water
- Knead well
- Let rest 10 minutes
- Roll out between sheets of parchment paper to 1/4" thick
- Cut into strips
- Fried - in vegetable oil on medium heat, until each side is golden brown
- Bake - brush with olive oil, sprinkle with salt, bake at 400F 10-12 minutes (until golden)
- Let cool on paper towel, sprinkle with more salt if needed
Notes
At 4 servings per batch, round it up to 175 calories and 2 net carbs.
I’m also going to mess around with another iteration of my keto Dorito Nacho chips, rolling out the fries to as thin as I can, and replacing the 1/2 tsp of salt with the the Nacho flavouring (below) and 1 tbsp of oil.
Update – I need to buy some different paprika, but the recipe is close to being done. 1 tbsp of oil is the right amount to make these taco chip-like crackers (aka Nachos).
Nacho flavouring
Ingredients
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 3/4 tsp ground cumin
- 1 tsp red paprika
- 1.5 tsp chili powder

The seasoning has a lot of carbs, and when I find a good nutrition calculator, I’ll update all my recipe cards. In the meantime, I’m going with 8 net grams for the batch of seasoning.
1/4 of the whole recipe is approximately 185 calories and 4 net grams of carbs.
