Roast Pumpkin and Potatoes
Ingredients
- 2-3 pounds Pumpkin
- 1 pound potatoes
- 1-2 pounts sweet potatoes
- 1/4 - 1/3 cup melted butter or olive oil See below
- Salt & Pepper to taste
- small bunch of rosemary
Instructions
- Preheat oven to 350F
- (Optional - peel the pumpkin and potatoes)
- Cut everything into large bite-sized chunks, around 1.5" cubes
- Toss everything in a large bowl, spread on a parchment-lined baking sheet.
- Stir on the sheet every 15 minutes so they brown evenly, and bake for 1 hour.
Notes
Use 1 tbsp per pound.
