Orange Caramel Sauce

Ingredients
  

  • 1 cup sugar
  • 1/4 cup water
  • 1 cup orange juice (room temp)
  • 1 tbsp bourbon ( "optional" )
  • 2 tbsp salted butter
  • 1/2 tsp grated orange zest ( or use the zest of a whole orange)

Instructions
 

  • Bring water and sugar to a boil.
  • As soon as the mixture starts to turn an amber colour, remove from heat, and slowly whisk in the orange juice and "optional" bourbon.
  • Whisk in the zest, return to heat, and boil for 5 minutes, or until you get a dark caramel colour.
  • Remove from heat, and whisk in the butter.
  • Use immediately, or store in a jar in the fridge for up to 2 weeks.

Notes

If the bourbon happens to burst into flames, enjoy the show. The alcohol will cook off when you return the mixture to boil for 5 minutes.
