Keto Wraps

Servings 6 6.5" wraps

Ingredients
  

Dry ingredients

  • 1/4 cup oat fiber
  • 1/3 cup flaxseed meal
  • 1/2 cup 1+ tbsp vital wheat gluten ( see #1 below )
  • 1 tsp salt ( see #2 below )
  • 1 tbsp allulose ( optional )
  • 1/4 tsp xanthan gum

Wet Ingredients

  • 1/2 + 1/3 cup warm water
  • 1 tsp psyllium husk powder
  • 1 tbsp melted butter (or oil)
  • 1 large egg

Instructions
 

  • Whisk the dry ingredients together.
  • Form a well in the middle of the dry ingredients.
  • In a separate bowl, whisk the wet ingredients together, and let sit for 10 minutes.
  • Slowly add the wet mix to the well, and pull the dry ingredients in (like making pasta). If this doesn't make sense, just stir everything together until smooth.
  • At this point,you should have a very sticky dough.
  • Using a tortilla press (with parchment paper), or 2 pieces of oiled parchment paper and a rolling pin, form the wrap/pita to desired thickness, (see #3)
  • Pan fry on medium heat for 50-60 seconds each side.

Notes

1 I'm working on a version with more oat fiber and flax meal and no wheat gluten.
2 You might want even more salt. The original version had 1/2 tsp, and was very bland.
3 Something like the thickness of 2 quarters is about right. Anything thicker will require longer cooking time, or allow time for the middle to dry out since you don't want a wet/goopy middle layer in your wrap.
1/4 cup is perfect for 7" wrap, reduce by 1 tsp and you should get 6 x 6 1/2" wraps
