Honey Glazed Carrots

Ingredients
  

  • 8 medium peeled carrots
  • 3 tbsp olive oil
  • 1/4 cup honey
  • Salt&pepper to taste ( start with 1/2 tsp and 1/4 tsp )

Instructions
 

  • Preheat oven to 350F
  • Cut the carrots to whatever size and shape you like.
  • In a large bowl, whisk everything but the carrots together.
  • Toss the carrots in the sauce, then place in a greased oven-safe baking dish, or place the carrots and coat them with the glaze. Either way, pour whatever is left over on top of the carrots.
  • Turn the carrots every 10 minutes.
  • Bake until tender, approximately 30 minutes. I like to do this uncovered so the carrots brown up a bit.
