Easy No-knead bread

Ingredients
  

  • 1 lb all-purpose flour approx 3.5 cups
  • 2 cups warm water under 120F
  • 1 tbsp active dry yeast
  • 1-3 tbsp sugar see below
  • 1 tsp salt
  • 2 tbsp olive oil, plus 1 for rising.

Instructions
 

  • Stir everything together in a large bowl, until a dough forms and pulls clean from the sides of the bowl. Scrape the sides every minute.
  • Toss in 1 tbsp oil, so the ball of dough is completely covered
  • Cover the bowl with clingwrap or a lint-free cloth, and leave in a warm, draft-free place until the dough doubles in size, at least 1 hour.
  • Punch the dough down, form into whatever shape you like, place those things in a baking container, cover, and let rise again for another 30 minutes.
  • Score the top, brush with whatever wash or glaze you like, bake at 350 until golden brown. See #2 below

Notes

  1. Min 1 tbsp to feed the yeast, more makes the dough rise faster, and sweetens up the finished product.
  2. Washes : water, egg white, egg yolk, whole egg, milk, butter, oil. Feel free to sprinkle salt, oats, etc on top.
