Yes, keto donuts.
Today had 2 keto donuts, a traditional cake-style, and a Crispy Creme Clone Pastry for my old friends from Soviet Russia .
Old Fashioned Cake Donut - Keto
Ingredients
- 1/2 cup coconut flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 cup keto sugar, preferably powdered
- 6 eggs room temperature
- 1/2 cup salted butter, melted
- 1.5 tsp vanilla extract
- 1/2 tsp flavour extract ( optional )
Instructions
- Preheat oven to 350F
- Whisk the dry ingredients together.
- Add the rest of the ingredients, stir until fully mixed.
- Pour into well-greased donut molds (or muffin tin), 2/3 full.
- Bake approximately 20 minutes, until top is golden brown, and toothpick comes out clean.
- Pop out of the pan and let completely cool on a rack before decorating or serving.
Notes
It's got a cake donut vibe, but the coconut flour does come through.
Crispy Creme Clone Pastry - Keto
Ingredients
- 2 eggs room temperature
- 3 tbsp salted butter
- 50 grams powdered keto sweetener (erythritol, allulose)
- 2 tbsp heavy whipping cream
- 1 tsp vanilla extract
- 150 grams almond flour
- 1.5 tsp baking powder
- 1 pinch salt
Instructions
- Separate the eggs.
- In a small saucepan, melt the butter and sugar, stir until smooth. When it's fully dissolved, remove from heat, add the whipping cream, stir a bit more, and let cool.
- While the butter is melting, whisk the egg whites to stiff peaks.
- Transfer the melted butter mix to a large bowl.
- Whisk 1 yolk at a time to the butter mix.
- Stir in all the dry ingredients.
- Fold in the egg whites.
- In a well-greased donut pan (or muffin tin), carefully spoon or pipe in the batter to 2/3 full.
- Bake 10-15 minutes, until a toothpick comes out clean (tops should start to turn a light golden brown).
- Let sit 5-10 minutes, remove from the mold, and let completely cool on a rack.

Cinnamon Sugar
Ingredients
- 2 tbsp butter
- 1 tsp ground cinnamon
- 4 tsp keto-friendly sugar (allulose, erythritol)
Instructions
- Melt the butter in a small pot on low heat.
- Meanwhile, whisk the cinnamon and sugar together. Traditional ratio is around 1 part cinnamon to 3-4 parts sugar. Some people like this to be very sweet, and up to 16 parts sugar works. This also depends on where you're using the mix.
- Brush melted butter on top of the donut.
- Roll/toss the donut in the mix.
Basic Keto Icing
Ingredients
- 1/3 cup powdered keto sugar
- 2 tbsp heavy whipping cream
- 1 tsp vanilla extract
- 1 tbsp cocoa powder ( optional )
Instructions
- Whisk to smooth.
- If this is too thick, you can thin by adding more heavy whipping cream, or water to thin it out - just make sure to let it dry completely before serving.
- You can substitute any keto liquid for the heavy whipping cream (almond milk, soy milk, water, etc).
