Deviled Eggs

Course Side Dish

Ingredients
  

  • 6 eggs Hard-boiled
  • 1/4 cup Mayo
  • 1 tbsp Butter
  • 2 tsp Yellow mustard
  • 2 tsp Dijon mustard
  • 2 tsp Sweet pickle juice ( see below )
  • 1 tsp Sugar
  • 1 dash Tobasco sauce ( optional )
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 2 tsp Paprika for garnish
  • 1/4 cup Bacon bits for "garnish" ( allegedly optional )

Instructions
 

  • Place eggs in large saucepan, cover with water.
  • Bring to a boil for 1 minute, remove from heat, and let sit 17 minutes (fully hard boiled).
  • Peel eggs.
  • Slice eggs lengthwise in half,
  • Remove yolks and transfer to a medium bowl.
  • Add mayo, butter, mustards, pickle juice, sugar, salt, pepper, and Tabasco sauce.  Use a fork to mash well.
  • Pipe or spoon into egg halves.
  • Sprinle with paprika and "optional" bacon.

Notes

Add 1/4 tsp sugar if you're not using sweet pickle juice.
Replace with vinegar if no pickle juice available.
