The pie crust needs to be completely cooled before filling it, and that needs to set for at least 3 hours.
Keto pie crust
Ingredients
- 1.5 cup almond flour
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/3 cup keto sugar ( allulose is always best )
- 3 tbsp unsalted butter ( plus 1 tsp to grease the pan )
- 1 large egg
- 2 tsp vanilla extract
Instructions
- Preheat oven to 375F
- Completely grease the pan with the 1 tsp butter.
- In a large bowl, whisk the dry ingredients.
- Cut the butter into the dry ingredients (fork, stiff whisk, food processor, etc) until it forms into coarse crumbs.
- Beat the egg in a separate bowl, then stir it and the vanilla to the dough.
- The dough should be able to form a fairly smooth ball.
- Transfer the dough to the pit tin, spread it out evenly.
- Dock the bottom and sides to prevent bubbles from forming.
- Bake for 10 minutes.
- Remove from the oven. The crust has very likely poofed up on you. If it did, gently press down the base with a silicone spatula, and dock it again. Loosely cover just the edges with aluminum foil, return to the oven and bake until the crust is golden brown (keep a close eye on it after 5 minutes - could take up to 10).
- Remove and let cool completely before filling.

Keto Chocolate Silk Filling
Ingredients
- 16 oz Cream cheese (2 packs)
- 4 tbsp Salted butter
- 4 tbsp Sour cream
- 1 tbsp Vanilla extract
- 1/2 cup Keto sugar ( allulose is best )
- 1/2 cup Cocoa powder ( Dutch process is best )
Instructions
- Mix all ingredients with a hand mixer until fluffy.
- Pour into a 9" cooled, pre-baked pie, and chill for 3 hours.
Fill the pie crust with the chocolate silky awesomeness for 3 hours. Just before serving, make a batch of whipped cream:
Whipped Cream
Ingredients
- 1 cup heavy whipping cream
- 1 tbsp powdered or confectioner's sugar (allullose or erythritol for keto)
- 1 vanilla bean or 1 tsp vanilla extract
Instructions
- The bowl and beaters should be chilled to 40F and completely dry.
- The heavy whipping cream should also be at 40F.
- Start the hand mixer on low, and start whipping the cream until it starts to increase in volume.
- Add the rest of the ingredients, speed up the mixer, and keep whipping until hard peaks form.
Notes
Adjust the amount of sweetener depending on the use. If you're putting this on top of an already sweet dessert, you probably want to use less sugar. If this is going on top of something a little bitter, add more sugar.
