Chicken Bread

Ingredients
  

  • 150 grams cooked ground chicken (1/3 pound) ( see #1 below )
  • 50 grams Dry, grated parmesan cheese (approx 1/2 cup) The dry kind, like Kraft
  • 75 grams chopped veggies (volume will vary wildly) ( see #2 below )
  • 3 large eggs
  • 2 tsp olive oil
  • 1/4 tsp salt
  • 1 tbsp psyllium husk powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1-2 tbsp seasoning, optional ( see #3 below )

Instructions
 

  • Oil your loaf pan, and pre-heat oven to 350
  • Cook the chicken however you like, do not season it. Boiling in water until internal temperature hits 165 is the easiest.
  • Let the chicken cool completely.
  • Place all the ingredients in a blender, and blend until very smooth.
  • Pour into the loaf pan and bake ( see #4 below for times ).
  • Makes 2 mini-loaves, double the recipe to make a full-sized loaf.

Notes

#1 Ideally, use skinless chicken breast, boiled or roasted. It's going to get blended anyways. 
#2 Anything from iceberg lettuce to insanity peppers will work. Maybe skip the insanity part. Iceberg lettuce is recommended.
#3 Italian seasoning, or 1 tsp garlic powder, 
#4 For 1.5" tall mini-loaf, 25-30 minutes for a 5x3" loaf pan. 45-55 minutes for a 3" loaf
