Big Mac Chaffles

Hamburger patties – I personally like the 50-50 beef and pork mix, but 100% beef works just fine. I’d recommend skipping over the onions, worcestershire sauce, and obviously the breadcrumbs for the keto version (those ingredients are in the base hamburger recipe because I don’t exclusively make keto content.

Hamburger patties

Ingredients
  

  • 1/2 pound ground beef ( or 100% beef instead of 50% pork )
  • 1/2 pound ground pork
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp white vinegar
  • 1/4 cup finely diced onions ( optional )
  • 2 tbsp worcestershire sauce ( optional, replaces vinegar )
  • 1/4 cup breadcrumbs/ground crackers ( optional - not keto )

Instructions
 

  • Mix well.
  • Press/form into shape.
  • Let sit in fridge for at least 1 hour before using.

Big Mac Sauce

Ingredients
  

  • 1/2 cup Mayo
  • 1 large Dill pickle - finely diced ( approx 20 grams )
  • 2 tbsp Yellow mustard
  • 1/2 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp White vinegar ( avoid adding flavour from the vinegar )
  • 1 tsp allulose ( or any liquid keto sweetener )

Notes

Mix until combined, store in an airtight container in the fridge up to 1 week.

Classic Chaffle

Ingredients
  

  • 1 egg
  • 1/2 cup shredded cheese (I prefer 50-50 cheddar-mozza)

Instructions
 

  • Lightly whisk the egg.
  • Add the cheese, and toss in the egg to make the batter.
  • Cook in a preheated mini waffle maker for 3-4 minutes, until it's brown and crisped.

Notes

I find it helps to think of coating the cheese in a batter and not trying to make a batter with shredded cheese.
Pour half (1/4 cup) of the mixture onto a 4″ diameter mini-waffle maker and cook for 3-4 minutes.
Optional - let cool on a rack to crisp up a bit.
I add a pinch of salt, pepper, garlic powder, and oregano to all of mine. Sometimes I’ll add in some dehydrated onion.

Wonderbread Chaffle

Ingredients
  

  • 1 egg
  • 3 tbsp almond flour
  • 1 tbsp mayo
  • 1/4 tsp baking powder
  • 1 tsp water

Instructions
 

  • Whisk the egg until the whites are completely gone.
  • Stir in the rest of the ingredients.
  • Pour half (1/4 cup) of the mixture onto a mini (4″ diameter) waffle maker and cook for 3-4 minutes.

Notes

I usually add a pinch of salt, pepper, garlic powder, and oregano to mine.
