Beef Curry
Ingredients
- 2 tbsp oil
- 1 medium onion, diced
- 1 lb rump roast, diced into 1.5" cubes
- 2 cup beef stock (or broth)
- 2 tbsp mild curry powder, up to 3 tbsp (make your own!)
- 1.5 cup chopped veggies (see below)
- 2 medium tomatoes, diced (approx 1 cup each)
- 1 cup Greek yogurt (make your own!)
- 2 tbsp fresh coriander ( yes it's cilantro)
Instructions
- In a large saucepan, bring oil to medium heat.
- Add onion and cook on medium-high for 3 minutes.
- Add meat, and cook until browned.
- Add stock, curry spices, veggies reduce heat to med-low)
- Simmer for 1 hour, or until the meat is tender.
- Add tomatoes, half the yogurt, half the coriander, and stir until heated.
- Serve with remaining yogurt and coriander.
Notes
Any meat works, be careful with extra-lean meat like pork or bison.
For the vegetables, sweet potatoes, carrots, cauliflower, broccoli, baby spinach, green beans, corn, okra, peas, basically anything you'd put in a stew. Frozen mixed veg is a great standby.
