Pina Colada Balls
Ingredients
- 2 cups shredded, unsweetened coconut
- 2 eggs at room temperature
- 2 tbsp softened unsalted butter
- 2/3 cup powdered sweetener
- 1/4 tsp salt
- 1 tsp rum extract
- 1 tsp pineapple extract
Instructions
- Mix everything together.
- Roll out balls using a 2oz ice cream scoop.
- Bake at 300F until golden brown (approx 30 min)
- Let cool, and trim the awesome eggy goop that forms at the base of the balls.
