Pina Colada Balls

Ingredients
  

  • 2 cups shredded, unsweetened coconut
  • 2 eggs at room temperature
  • 2 tbsp softened unsalted butter
  • 2/3 cup powdered sweetener
  • 1/4 tsp salt
  • 1 tsp rum extract
  • 1 tsp pineapple extract

Instructions
 

  • Mix everything together.
  • Roll out balls using a 2oz ice cream scoop.
  • Bake at 300F until golden brown (approx 30 min)
  • Let cool, and trim the awesome eggy goop that forms at the base of the balls.
