Today’s stream was just a bunch of old recipes that I haven’t made for a while (on or off camera).

Keto Raspberry Jam is something that just happened on stream, and I think it’s close to perfect.
Raspberry Jam
Ingredients
- 1/4 cup chia seeds
- 1 1/4 cup hot water
- 1/2 tsp raspberry extract
- few drops red food colouring
- 1/4 cup powdered allulose
- 1/8 tsp xanthan gum
Instructions
- Soak the chia seeds in hot water for 30 minutes. Stir it up every 5 minutes.
- Add the rest of the ingredients (except the xanthan gum), and mix well.
- Sprinkle the xanthan gum across the top and stir it in thoroughly.
Notes
The xanthan gum will thicken up quickly, and it tends to clump, so sprinkling it across the top while you're stirring quickly is recommended.
Depending on your extracts, you might need a little more or less flavouring and colouring.
Apple Cider Vinegar Strawberry Lemonade
Ingredients
- 2 tbsp Apple cider vinegar
- 1 tbsp lemon juice
- 5 tsp allulose or erythritol ( erythritol works great here )
- 1 cup cold water
- 1/4 tsp strawberry extract
Instructions
- Shake well and serve.
Pina Colada Balls
Ingredients
- 2 cup Shredded, unsweetened coconut
- 2 large eggs, room temperature, lightly beaten
- 2 tbsp softened, unsalted butter
- 2/3 cup powdered allulose ( or erythritol )
- 1/4 tsp salt
- 1.5 tsp rum extract
- 1 tsp pineapple extract
Instructions
- Preheat oven to 300F
- Mix everything well.
- Use an ice cream scoop, and place the balls at least 1" apart on a silicone mat, on a baking sheet.
- Bake for approximately 30 minutes, or until golden brown.
Notes
There might be some sugar-eggy-butter around the base of the balls. You can trim this off, or ignore it. It's still delicious!
Buttercream Cream Cheese Icing
Ingredients
- 2 parts powdered keto sugar
- 1 part cream cheese
- 1/2 part butter
- 1/2 part heavy whipping cream
- flavour extract to taste ( vanilla if nothing else )
- optional food colouring ( a few drops goes a long way )
Instructions
- Mix well until smooth.
Angel Food Cake
Ingredients
Dry
- 1/2 cup coconut flour 1
- 1 tbsp baking powder
Wet
- 8 eggs separated
- 2/3 cup powdered allulose or erythritol
- 1 tsp vanilla extract
Instructions
- Whisk the dry ingredients together.
- In a separate bowl, whisk the 8 egg whites to firm peaks and set aside.
- In another bowl, cream the egg yolks, 2 eggs, sugar, and beat until thick, fluffy, and pale.
- Add the vanilla extract and mix well.
- Slowly beat in the dry ingredients a little bit at a time, until well combined.
- Gently fold in the egg whites with a spatula until well combined.
- Pour into a well-greased cake pan (10 cup/2.4 liter) or angel food pan.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes.
- Remove from pan, and let cool completely.
