Tribute to Meat Loaf

Meatloaf
Ingredients
- 1 lb ground beef
- 1/2 lb ground pork
- 3/4 cup salted crackers, or fancy "ritzy" butter crackers ( see below )
- 1/2 cup chopped onion
- 2 tsp minced garlic ( or 1 tsp garlic powder )
- 2 eggs beaten
- 1 tsp onion powder
- 1/2 tsp pepper
- 2 tsp worcestershire sasuce
- 1/4 tsp hot sauce ( optional )
- 9-12 strips bacon
Glaze
- 1/2 cup ketchup OR catsup
- 1/4 cup packed brown sugar
- 1/4 cup vinegar
- 1 tsp paprika ( optional )
Instructions
- Preheat oven to 350F
Glaze
- In a saucepan on medium, whisk the ingredients together, S&P or sugar to taste
Meatloaf
- Sauté onion and minced garlic in oil until tender (4-5 minutes on medium)
- Mix all the meatloaf ingredients together
Assemble
- Line the bottom of a 9x5 loaf pan with overlapping strips of bacon so the ends hang over the sides.
- Brush 2 tablespoons of the glaze on top of the bacon
- Press the meat mixture into the pan.
- Fold the bacon ends over the top of the loaf.
- Flip the loaf over onto a baking sheet lined with aluminum foil, parchment paper, or a Silpat.
- Bake until the bacon is browned. approx 50 minutes
- Brush the remaining glaze on top of the bacon. and return to the oven.
- Cook until interior temperature is at least 165F (approx 15-20 minutes).
- Remove from oven, and let rest for at least 10 minutes before removing from the pan.
Notes
Substitute crackers with 1/2 cup rolled oats or breadcrumbs + 1/2 tsp salt
Optional - make 1.5 cups of puree with carrot, celery, bell pepper, mushrooms in a food processor, and add to the meat mixture.
Optional - use BBQ sauce, or something similarly vinegar and sugar based instead of ketchup.
