Fortune Cookies
Ingredients
- 1 egg white
- 1/4 tsp each vanilla and almond extract
- 1 tbsp melted butter
- 1 tbsp milk See consistency below
- 1/3 cup all-purpose flour See consistency below
- 1/4 cup sugar
- 1/8 tsp salt
Instructions
- Preheat oven to 350 F
- Whisk wet ingredients and sugar until completely smooth.
- In a separate bowl, whisk the remaining dry ingredients.
- Sift in the dry ingredients while whisking and keep whisking until smooth.
- On a silicone sheet (or very well-sprayed baking sheet - NOT greased), spread 1 tbsp of the batter, and spread to a 4" diameter (10cm). Make 2 circles that are about 4" apart.
- Bake until 1/2 to 2/3 is brown, 5-7 minutes.
- Use a spatula to flip the cookies over, place the fortune in the middle, fold the disc in half, and then bend it in the middle using a glass, or the edge of your baking sheet.
- Let the cookie cool completely inside a cup, or muffin tray.
- Repeat until all the batter is used.
Notes
- Consistency should be around pancake batter; thin enough to spread, but thick enough to stick together. Adjust with a little flour or milk if needed.
- Fortunes should be around 3.5" x 1/2" (9 cm x 1.25 cm)
- Double the recipe to make a dozen cookies.
