Soft Ginger Cookies
Ingredients
- 3/4 cup butter
- 1 cup sugar plus more for coating
- 1 large egg room temperature
- 1/4 cup molasses
- 2 1/4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp baking soda
- 3/4 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp salt
Instructions
- Preheat oven to 350F
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes.
- Beat in egg and molasses.
- Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture and mix well.
- Roll into 1-1/2-in. balls, then roll in sugar.
- Remove to wire racks to cool.
Notes
If you want to make these crisp, skip the baking soda.
If the cookies turn too flat while baking, refrigerate the balls for 10-15 minutes before making the next batch.
