Keto Pancakes

vs Wonderbread Chaffle + 1 tbsp sweetener, + 1/2 tsp butterscotch extract, + 1/8 tsp baking powder

Results? The first pancake was hands-down the best. The wonderbread chaffle version is very similar, and not a surprise that it was a clear 2nd place. The random keto pancake recipe was based on almond flour instead of eggs and cream cheese, and is being purged from my records.

 

 

I’m glad I did the comparison between the pancake recipes and didn’t just assume that the pancake recipe I liked would be the best. Today’s stream reinforced my understanding of how almond flour works, and now you don’t have to guess which style of keto pancakes to make in the future. It’s a win-win!

 

Syrup that needs to be keto-ified

I replaced the sugar with erythritol, and the weird cooling effect was especially noticeable because it came from a warm syrup.

I’m thinking this needs to be made with allulose, and no butter. The butter brings some awesome flavour, but will turn the syrup to a solid unless it’s served warm, so I’m just going to add more flavouring, water, and maybe a splash of bourbon, cognac, or brandy.

If I can fix this recipe, I’ll make a recipe card for it, and showcase it in a future video.
