The tip of today (other than the obligatory egg shell removal) was how to quickly whip up egg whites – not the copper bowl method, since that’s borderline gadgetry (but still really solid gastroscience – look up “conalbumin and copper” if you’re really interested). The whole point of whipping egg whites is to mess around with the protein and incorporate as much air as possible. I find that tilting my bowl lets the beaters interact with the maximum amount of liquid and air at the same time.
Drumroll please – the bacon weave I made today, cloud bread top and bottom, and the pina colada balls.
