S01E28 Souvlakis, Pita, Saganaki Cheese

The souvlakis are normally cooked on a BBQ (or grill), med-high for a total of 5-8 minutes (depending on everything), turning (at least) once. I’m still annoyed when I see people playing with meat on the BBQ, but this is one of the few times it’s acceptable. For today’s stream, I’m going to cook them in my oven under the broiler for the same time they’d be on the BBQ : 6-8 mins for the chicken, 5-7 mins for the beef and pork. You could also cook the souvlakis at 450F for 15-20 minutes and then broiler for 1-2 just for extra colour, but that risks drying out the meat and I don’t like it.

There are many ways to serve the souvlaki: as a side dish, on top of a bed of rice pilaf, beside a Greek salad, or with or inside some fresh pitas, all of these with or without a drizzle of olive oil and a splash of lemon juice.
