After asking the twitch audience, we decided to make a mirepoix stuffed pork loin, and a Greek salad stuffed butterflied chicken breast.
I call the first one Γουρούνι α λα Φιλ (Pig a la Phil)
I call the second one Greek stuffed chicken
I need to review the video because everything was done on the fly, but here’s the rough recipe:
1 pork loin roast (1.5 lbs)
1 cup of mirepoix
3 cloves of minced garlic
9 strips of bacon (enough to cover the loin)
Bunch of rosemary, and olive oil.
The roast was approximately 50 minutes at 350F then broiled on high for 6 minutes, just to get the bacon a little more crispy, and set off my fire alarm when I pulled it out of the even.
