Sheet of Bacon
Line baking sheet with parchment paper for easier cleaning (optional, but recommended).
Preheat oven to 400F
Lay the bacon on the sheet.*
Cook 15-18 minutes, depending on desired crispness.
(Some people go with 25-35 minutes, but that’s a 350F thing)
Transfer to paper towels to soak up the excess grease, and save the fat in the tray for later use (ie keto frosting).
*Don’t worry about scraping the bacon, or trying to stretch it. If the pan is room temperature or colder, the bacon should stay flat. If the bacon curls up, gently scrape it with the back of a butter knife the next time you make it

Approx 25 minutes at 400F

Pan fried bacon
Let the bacon come to room temperature (15-25 minutes should be good).
Stretch the bacon (scrape with the back of a butter knife).
Lay the bacon on a cold pan, using strips cut in half is usually necessary if you’re frying more than a few strips at a time.
Put the pan on a cold stove, heat to medium, and flip once when bottom is crispy. The bacon should easily lift from the pan – start checking at 4.5 minutes.

Pro tip – cover the bacon with water before putting it on the stove.
Stove to medium-high and turn to medium when the water is gone.
Cook until crisp.
This reduces the splatter, renders the fat better, and much better for thin bacon (which I rarely buy).
