and in general, you can heat up
1/4 cup butter + 1/2 cup brown sugar + 3 cups of fruit + 1/4 cup cognac or brandy. Cook everything but the alcohol 2-3 minutes, add the alcohol, ignite, let it extinguish, serve over ice cream, crepes, rice pudding, etc.
Do not use nonstick pans for this – use stainless steel or cast iron.
