pumpkin spice chaffle
- 1 egg
- 1 tsp cream cheese
- 1.5 tbsp pumpkin puree
- 1 tbsp erythritol/sweetener
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp pumpkin spice mix
- 1/2 cup shredded mozzarella
- 1 tbsp almond flour
- 2 tsp whipping cream
- 1 tsp maple flavour (optional)
Beat the egg until the whites are incorporated.
Beat in the rest of the ingredients.
Cook in mini-waffle maker for 3-4 minutes.
Let cool for at least 5 minutes before assembling.
pumpkin spice mix (recipe card)
- 2 tbsp cinnamon
- 2 tsp nutmeg
- 1 tsp ginger
- 1/2 tsp cloves
Grind this all together.
Filling
- 2 tbsp softened cream cheese
- 1 tbsp sweetener
- 1/4 tsp vanilla
Beat this all together.
