2021-10-04 Phyllopalooza!
Today’s special ingredient is Phyllo dough. Before anyone calls me out on “no fancy ingredients”, phyllo dough is made with flour, water, oil, and vinegar. Phyllo is found in most grocery stores in the frozen pastry section, typically in 1 pound boxes, with a bunch of sheets of dough, and should cost around $3-4. Phyllo isn’t like puff pastry, and doesn’t rise when it’s cooked. Phyllo can be made at home, but without a really good dough sheeter, or world-class rolling skills, you’re not going to make it as thin as the store-bought variety. This isn’t a bad thing, and it makes for a really cool and rustic savoury pie crust.

- Spanakopita (spinach pie) – check!
- Tiropita (cheese pie)
- Baklava (doesn’t translate to sweet walnut pie, but it should) – check!
- Pistachio Baklava (!!!)
- Hawaiian Baklava (???) – check!
If I have time during the stream, I’m going to try to make a Hawaiian baklava – macadamia nuts with lilikoi syrup. I don’t think this has been done before, so let’s hope I don’t embarrass myself too badly. I’m going to wing the recipe and jot it down as I go.
