Peanut caramel

Keto version uses the keto corn syrup and allulose instead of sugar.

Peanut Caramel

Ingredients
  

  • 1/2 cup corn syrup
  • 3/4 cup sugar
  • 1 cup heavy whipping cream
  • 1/2 cup milk
  • 1/4 tsp salt
  • 2 cups peanuts ( I like salted )

Instructions
 

  • In a heavy-bottom pot, bring the corn syrup and sugar to a boil,stirring constantly so nothing sticks to the bottom or sides.
  • After the sugar starts to turn a medium-brown golden colour (think coffee with 3 creams), whisk in the cream and milk and salt, let cook another minute while still whisking.
  • Remove from heat, and stir in the peanuts.
