1/2 cup of Oat Fiber (41g/1.45oz)
2/3 cup of Flaxseed Meal (70g/2.46oz)
1.25 cups of Vital Wheat Gluten (190g/4.9oz)
1 teaspoon Salt (6g / 0.21oz)
0-4 Tablespoons powdered Sweetener (0 – 60g/4oz)
1/2 teaspoon Xanthan Gum (2.5g/0.88oz)
1 cup warm water (50-55C / 120-131F) (240ml/8.1oz)
1 Tablespoon INSTANT Yeast (8g/0.28oz)
1 teaspoon Honey (7g/0.25oz)
2 Eggs (lightly beaten)
2 Tablespoons softened Butter (30g/1.05oz)
dry ingredients whisk together
proof water + yeast + honey
mixing bowl:
yeast + melted butter
+ beaten eggs
then add dry mix, machine paddle on low, then hook on medium 7-8 mins
or knead like mad for a lot longer.
until it pulls away from the bowl (like real bread)
put in
greased 8x5x4 pan
20×12.5×10 cm
something higher than wider is more ideal
spray wrap with oil, cover bread pan, proof in oven
loosely drape the cling wrap, dough will rise
This is under review because the last two times I made this, I just let it rise in a slightly warm oven for half an hour, punched it down, formed into the desired shape, and let that proof for 20-ish minutes and it was perfect.
The original instructions for letting the dough rise is : add boiling water to pan in oven every 15 minutes to have super humid and warm environment.
Microwave is really good as a box, beacuse can’t preheat oven if you’re rising the bread in there
2 hours is good. 2 1/2 max, until it stops rising
bake in preheated 375F for 25min
won’t rise much more while cooking
let it rest on a cooling rack until room temp.
