Brown 1 lb of meat, add 1-2 tbsp of taco seasoning after draining before fully browned.
Shred some lettuce in a bowl, add diced onions, tomatoes, seasoned meat, a dollop of sour cream, maybe guac, and a happy amount of shredded cheese.
Taco Seasoning
Ingredients
- 2 tsp Chili powder
- 2 tsp Paprika
- 1 tsp Dehydrated onion (or powder)
- 1/2 tsp Cumin (ground)
- 1/2 tsp Garlic powder
- 1/2 tsp Oregano (Greek is always best)
- 1/2 tsp Salt
- 1/4 tsp Black pepper (freshly ground is always best)
- 1/8 tsp Cayenne pepper
- 1/8 tsp Red pepper flakes
Instructions
- Whisk together.
- Add to ground meat while browning.
- Optional - add water (1/2 cup) and reduce to evenly distribute flavours.
Notes
This will season 1 pound of ground beef.
Taco Casserole
Ingredients
- 2 lbs Ground beef
- 1/2 large Onion, diced
- 2 cloves Garlic, minced
- 1/2 large Bell pepper, diced
- 4 tbsp Taco seasoning
- 4 large Eggs
- 2 cups Tax-Mex or sharp cheddar cheese, shredded.
Instructions
- Preheat oven to 350F.
- In a large pan, brown the meat, green peppers, onions, garlic.
- Drain the excess oil.
- Stir in taco seasoning. (add 1/2 cup water and reduce if there's clumps)
- In another bowl, combine the eggs and half the cheese.
- Pour the meat mixture into a casserole dish.
- Cover with egg mixture.
- Lightly stir to let the egg mixture spread down.
- Cover with remaining cheese.
- Bake uncovered for 25 minutes, until cheese is bubbling.
- Remove from oven, add favourite taco toppings, and serve.
