Erythritol does not work well because of how it crystallizes, and I haven’t tried with polyols like xylitol or maltitol, but I don’t like using them anyways.
Add 1/3 cup of water, and honey flavouring and you have zero carb honey.
Corn Syrup
Ingredients
- 2 cup allulose
- 3/4 cup water
- 1/4 tsp cream of tartar
- 2 tsp lemon juice
- 1 pinch salt
Instructions
- Mix everything in a heavy-bottom saucepan over medium heat.
- Keep stirring until everything dissolves, and starts to simmer.
- Keep at exactly 230F for 15-20 minutes. It should thicken up and turn a golden amber/honey colour.
- Remove from heat, pour into heat-safe jars, and let cool.
- Makes 1 1/3 cup
