easiest sourdough without starter
1.5 cup bread or AP flour (or a total of 430 grams)
1.5 cup whole wheat flour
1 tsp salt (or 2)
1/4 tsp active dry yeast (1 gram, and instant is fine since the yeast will be slowly feeding for 12 hours)
3/4 cup lukewarm water (or 345 grams water total no yogurt)
3/4 cup buttermilk at room temp ( or yogurt?)
Stir together until well-mixed.
Cover with wrap, let sit at room temp 12-18 hours
77F = room temp
transfer to well-floured surface
sprinkle some flour on top of dough
fold it together using pastry scraper, about 7 folds and form a rough ball.
transfer to bowl lined with parchment paper, cover with tea towel
let stand for 1/2 hour as oven preheats
heat dutch oven in 450F oven
tranfer parchment paper with dough to DO
put lid on, bake 30 mins
remove lid (and some people say to remove the parchment paper as well)
bake uncovered another 10-15 minutes
optional, add 1 large fresh jalapeno chopped up and 1.5 cups grated sharp cheddar.
