Super Easy Biscuits

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 1/4 tsp salt see #1 below
  • 1/2 cup chilled butter, cut into small pieces
  • 1/2 - 1 cup optional fun things like aged cheddar, bacon, sliced jalapenos, pitted olives, cranberries, etc.
  • 1 cup buttermilk see #2 below

Instructions
 

  • Preheat oven to 450F
  • Whisk dry ingredients together.
  • Cut in cold butter - see #3 below,
  • Add optional fun ingredients - make sure they're not dripping wet.
  • Stir in buttermilk until barely combined. We do not want to make bread dough.
  • Measure 1/4 cup balls, place in a greased cast-iron pan, or baking sheet.
  • Bake approx 20 minutes, until golden brown.

Notes

  1. I like salty biscuits, but if you don't, and you're using salted butter, start with 1/2 tsp salt, and remember for next time.
  2. 1 cup buttermilk = 1 cup - 2 tsp milk + 2 tsp vinegar, stir and let sit 5 minutes. Sounds gross, deal with it. Depending on your flour, you might need less than 1 cup, so start with 3/4 cup and see if you need more liquid.
  3. Cutting butter = using a pastry cutter, knives, or fork, incorporate the chilled butter into the flour, until the mixture is crumbly.
