Ingredients
  

Date Filling

  • 1 lb Dates, pitted and chopped, approx 3 cups lightly packed
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tbsp brown sugar
  • 1/2 tsp baking soda

Crisp

  • 1 3/4 cup quick oats
  • 1 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1/4 tsp baking powder
  • 3/4 cup room-temp butter

Instructions
 

Baking prep

  • Preheat oven to 350F
  • Line an 8x8 square dish with parchment paper with 2 strips of 8" wide parchment paper so some paper hangs over all 4 sides.

Date Filling

  • Start stirring and don't stop until the filling is done.
  • Bring dates, water, lemon juice, sugar to a boil.
  • Add baking soda , let simmer until the dates have fallen apart, approx 5 minutes.
  • Remove from heat and let cool.

Crisp

  • Combine oats, flour, sugar, baking powder.
  • Add butter and stir until completely combined.

Assembly

  • Spread half the crisp in the baking dish and press firmly into place.
  • Spread the date mix evenly on top of the base.
  • Cover with remaining crisp, and gently press into place
  • Bake for 1 hour, or until the top is golden brown.
  • Let cool in the pan on a wire rack for 4 hours.
  • Remove from the pan and cut into 16 2"x2" squares.
