Date Squares
Ingredients
Date Filling
- 1 lb Dates, pitted and chopped, approx 3 cups lightly packed
- 1 cup water
- 2 tbsp lemon juice
- 2 tbsp brown sugar
- 1/2 tsp baking soda
Crisp
- 1 3/4 cup quick oats
- 1 cup all-purpose flour
- 3/4 cup brown sugar
- 1/4 tsp baking powder
- 3/4 cup room-temp butter
Instructions
Baking prep
- Preheat oven to 350F
- Line an 8x8 square dish with parchment paper with 2 strips of 8" wide parchment paper so some paper hangs over all 4 sides.
Date Filling
- Start stirring and don't stop until the filling is done.
- Bring dates, water, lemon juice, sugar to a boil.
- Add baking soda , let simmer until the dates have fallen apart, approx 5 minutes.
- Remove from heat and let cool.
Crisp
- Combine oats, flour, sugar, baking powder.
- Add butter and stir until completely combined.
Assembly
- Spread half the crisp in the baking dish and press firmly into place.
- Spread the date mix evenly on top of the base.
- Cover with remaining crisp, and gently press into place
- Bake for 1 hour, or until the top is golden brown.
- Let cool in the pan on a wire rack for 4 hours.
- Remove from the pan and cut into 16 2"x2" squares.
